Fried Rice

This is my Auntie Helen’s fried rice recipe.  Helen is my mom’s aunt, and she used to bring this to most family gatherings when I was little.  It’s good and easy to make.

Fried Rice

  • Sticky rice (We just make a batch of rice with whatever we’ve got on hand)
  • soy sauce, to taste
  • garlic, to taste
  • a few eggs, depending on how much you’re making and how much you like fried eggs in your fried rice, I like a generous amount.
  • green onions, how onion-y do you want it?
  • peas, enough green to redeem it a little
  • bacon, again, to taste

Cook the rice.  Cut the bacon into pieces and fry in a large frying pan.  Fry the green onions in the bacon grease, add the garlic and cook for a minute or two.  Add the rice to the pan and stir well.  Make a well in the middle of the pan and scramble the eggs.  Remove from heat, stir in peas and finally, add soy sauce to taste.
