Avocado Salad

it may not look apetizing, but it really is delcious

Avocados are some of the best part of living in CA for Z and me.  We love avocados, and love living in a place where they are affordable and readily available.  Not knowing where we’ll end up “settling down” someday, and knowing, that for now, California is likely a temporary residence, we indulge our passion for avocados as often as possible, telling ourselves, “We don’t know if we’ll ever live in California again, so we should enjoy these avocados while we can.”

Below is a recipe from Mom (who got it from Dad’s mom), and it is so good! It looks like yucky mush, but it tastes amazing.  When I was young and I first had it, Mom had to force me to eat it, she told me I had to try it because it tasted much better than it looked and she was pretty sure I would like it.  She was right.  I took one bite and have loved it ever since.

Avocado Salad

  • 2 eggs, hard boiled
  • 2 tomatoes, cut into bite sized pieces
  • 1 small can sliced olives (If you slice your own like we do, put in as many as you want!)
  • 2 avocados, cut into bite-sized pieces
  • ¹/8 tsp. chili powder
  • ½ tsp. salt
  • ½ tsp. pepper
  • Wishbone Deluxe French Dressing, to taste

Combine all ingredients.  This can be served alone or on leaf lettuce.

I’ve never had this on leaf lettuce, it’s so good on its own.  Also, a little of the french dressing goes a long way, so put in a tablespoon or two, a generous squirt from the bottle, stir it up, and taste to see if it needs more.  Once I overdressed it, and it really took away from the taste of the lovely avocados.
