Broccoli Salad

Since childhood broccoli has been Z’s favorite vegetable, and this is one of my mom’s recipes, so we both really like this salad.  I was talking to Mom on the phone last night while I was making this and she said it’s a recipe from one of her aunts, but she couldn’t remember which one.

Since there’s only two of us, I usually half the recipe, but I make the full dressing recipe and save half in the fridge – it’ll keep for a long time! – and then the next time I make it, the dressing is ready and there’s one less thing to do.  Also, you may use half broccoli and half cauliflower when making the salad, but since Z disdains cauliflower as emphatically as he loves broccoli, I wouldn’t dare ruin the salad with cauliflower.

Broccoli Salad

  • 5 c. broccoli (may use half cauliflower)
  • Bacon, crumbled and sprinkled on top at the end
  • ½ c. raisins (I don’t usually put raisins in, don’t care for them that much and never have any on hand)
  • ½ c. nuts (We usually put in slivered/chopped almonds or toasted pine nuts)
  • ¼ c. green onions

Dressing:

  • ¾ c. mayonnaise (could cut this with plain yogurt, if you’re so inclined)
  • ¼ c. sugar
  • 2 T. vinegar

Mix the dressing in a small bowl.  Put everything for the salad into a larger bowl and mix with the dressing, to taste.  This makes great lunch leftovers the next day too!
