Lemon Juice

This is something I learned from Mom.  When you have extra lemons on hand you need to use before they go bad, juice them, put the juice in a small plastic container, and freeze the juice.  Then when a recipe calls for fresh lemon juice and you don’t’ have lemons, you can get some out of the freezer.

I love always having “fresh” lemon juice in the freezer.  My uncle’s always giving us lemons, so we always have at least one thing of frozen lemon juice.  And make sure you freeze it in a microwave safe container, so if you forget to take it out in time to thaw for cooking, you can defrost it in the microwave in just a few minutes!  Which is what I end up doing more often than not.  What doesn’t get used goes back in the freezer.
