Pea Salad

This is one of my favorite salads.  I got this recipe from Mom:

Pea Salad

  • 1 head chopped/torn lettuce, iceberg is best
  • ½ chopped celery
  • ¼ cup thinly sliced mild onion – we use green onions
  • 1 pkg frozen peas – do not defrost
  • 1 can sliced water chestnuts cut in half
  • 1 pkg frozen pea pods cut in half or thirds
  • chopped bacon (optional)

Dressing

  • 2 cups mayonnaise
  • 4 tes. sugar
  • ¼ cup grated Parmesan cheese (We use Parmesan that’s been aged 2 years so I can eat it!)

Layer the salad in the above order (lettuce on the bottom…) in a bowl and seal the top with the dressing.  Let the salad sit 24 hours in the fridge.  Stir and sprinkle the top with bacon before serving.
