Garlicky White Bean Dip

We made this recently and it was a big hit!  Very garlicky, but very good.  This is from the July 2008 issue of Sunset Magazine:

  • 1 or 2 peeled garlic cloves
  • 2 cans (15 oz. each) white beans
  • ¼ c. extra virgin olive oil
  • ½ tes.finely shredded lemon zest
  • 1 T. fresh lemon juice
  • 1 T. fresh oregano
  • salt & freshly ground black pepper to taste.

In a food processor, whirl garlic cloves until finely chopped.  Scrape down the inside of the bowl and add the white beans, drained and rinsed; extra virgin olive oil; lemon zest; and fresh lemon juice.  Whirl until smooth and blended.

Transfer dip to a small bowl.  Stir in fresh oregano, then season to taste with salt and pepper.  Serve with assorted fresh vegetables or pita bread.  Makes about 2¼ cups.
